The Everton

The Everton


One of our favorite breakfast places in Massachusetts was Paul’s Diner. They always had good coffee and the kids used to love the fresh fruit on their pancakes and waffles. For me, I was so hooked to the ‘Everton’ that I never managed to try anything else. There’s something about spinach mixed with feta cheese and when you put it in an Omelette, it just tastes amazing. It is also one of the easiest things to make and quite a regular feature in our house.

You need:

  • 4 Eggs
  • Milk
  • Feta cheese
  • Bowl of Fresh Spinach (preferably baby)
  • Handful of Black or Kalamata Olives
  • Small (or half a medium) onion finely chopped
  • One tomato chopped

Break the eggs into a whisking bowl

Add a splash of milk and whisk

Add salt & pepper to taste

Chop all the veggies. Olives can be whole or halved.

Pour the whisked eggs into a large oiled non-stick pan

When the egg is mostly cooked, add the veggies to one half.

Add blobs of Feta cheese. The more you put the better it tastes :)

once the egg is cooked, fold the half over & EAT
